Chakhokhbili with Tushenka

A Georgian classic in rich tomato-onion sauce

Ingredients

  • 1 jar Gold Tushenka chicken (500g)
  • 4 large tomatoes (or 400g canned)
  • 3 medium onions
  • 4 cloves garlic
  • Bunch of fresh cilantro
  • 1 tsp ground fenugreek (utskho-suneli)
  • 1 hot chili pepper (optional)
  • Salt to taste

Instructions

  1. Slice onions into half-rings and sauté in a deep skillet without oil (the tushenka fat replaces it) for 5 minutes.
  2. Add Gold Tushenka chicken and mix with the onions.
  3. Grate or dice tomatoes and add to the meat. Bring to a boil.
  4. Add minced garlic, fenugreek, and sliced chili. Simmer uncovered on low heat for 20 minutes.
  5. Add chopped cilantro 5 minutes before done. Season with salt and serve hot.
Tips

Chakhokhbili should be thick — if the sauce is too thin, simmer uncovered longer. Use fresh fenugreek (utskho-suneli) for authentic flavor. Serve with rice or bread.
