Ajapsandali with Tushenka

Georgian vegetable ratatouille with juicy meat

Ingredients

  • 1 jar Gold Tushenka pork (500g)
  • 2 medium eggplants
  • 2 bell peppers
  • 3 tomatoes
  • 1 onion
  • 3 cloves garlic
  • Fresh basil and cilantro
  • Salt, pepper, khmeli-suneli to taste

Instructions

  1. Dice eggplants, salt them and let sit 10 minutes, then squeeze out excess moisture.
  2. Sauté onion in a pan, add Gold Tushenka pork.
  3. Add eggplant and sliced peppers, cook for 15 minutes.
  4. Add chopped tomatoes, garlic, and khmeli-suneli. Cook another 15 minutes.
  5. Add fresh basil and cilantro before serving.
Tips

Pre-salting eggplant removes bitterness. For a juicier dish, add a couple spoonfuls of tomato paste. Delicious cold as an appetizer too.
