Kharcho Soup with Tushenka

Hearty Georgian soup with walnuts and tkemali

Ingredients

  • 1 jar Gold Tushenka beef (500g)
  • 100g long-grain rice
  • 50g walnuts
  • 3 tbsp tkemali plum sauce
  • 2 onions
  • 3 cloves garlic
  • 1 tbsp khmeli-suneli spice mix
  • Bunch of fresh cilantro
  • 1.5 liters water
  • Salt and pepper to taste

Instructions

  1. Finely chop onions and sauté in a pot for 5 minutes. Add Gold Tushenka beef and stir.
  2. Add water and bring to a boil. Add rinsed rice.
  3. Crush walnuts in a blender or mortar to a paste-like consistency.
  4. After 15 minutes of cooking, add walnut paste, tkemali, and khmeli-suneli. Cook another 15 minutes.
  5. Add minced garlic and cilantro, season with salt and pepper. Cover and let rest 10 minutes.
Tips

Kharcho should be thick, somewhere between a soup and a stew. Add more rice if too thin. Walnuts give a velvety texture. Serve with lavash bread.
